Joe was a head line cook at a casino in Laughlin, Nevada
and Lulu had worked for Shakey's Pizza in Seattle, 
Fairbanks and Anchorage for many years. They each had a passion for food and cooking, so when they met for the first time in 1990, the conversation quickly turned to restaurants. The couple started Double Lu Catering and furnished meals for schools, church functions and bazaars. They worked for six years at the Saturday Market selling turkey legs.
In 1996, while working at a bazaar, a woman tried their burritos. She later returned to say that her father was looking for someone to sell good Mexican food inside the Chevron station at Minnesota and Spenard.Joe later moved his location inside the Chevron station at Boniface Parkway and Minnesota and Lulu runs the Cafe in Eagle River that opened in June of 2000.
